The stated mission of Raku Sushi & Lounge (in Edina and St. Louis Park's West End) is to blend "traditional Japanese fare with Italian, French, and other Asian influences." Yet the most successful food at Raku is the traditional Japanese: Textbook tempura, a lovely take on nabe yaki udon (noodle soup with chicken, egg, vegetables, and broth), and an impressive range of sushi and sashimi. Some non-sushi items, like the crispy dried beef, are worth trying. Raku's sushi includes an ingenious roll called the Naruto, made with crab, tuna, salmon, yellowtail, avocado, and caviar wrapped in thinly sliced cucumber.
