New Bohemia has created a successful hybrid of the European beer hall and the Chicago hot dog stand. Its concept and menu may seem simple - it's all about sausage and beer - but with all of its "classic," "premium," and "adventurous" wursts and several kinds of toppings, this fast-casual spot has the ability to serve 144 sausage and relish combinations -- 432 if you throw in all the different mustards. Adventurous sausages include wild boar; pheasant, buffalo, elk, and even a rattlesnake-rabbit. Sides include of Belgian fries, German potato salad, and coleslaw.
