"I go to the farmers market every day, and I don't really rely on recipes. I think about how to best use and bring together everything I have at the moment," says Ian Gray, owner of Lyn-Lake gastropub the Gray House. As a result, you never know what's on the menu, but you know it will be good. Recently, it was a goat burrito, goat chili, and goat chops, plus a tortelle stuffed with ham hocks and squash, a spicy cabbage salad, and a pressed, bone-in chicken that changes almost nightly. You can usually find the scallops, which have become a standout favorite. Gray's wife and co-owner, Katie, runs the beer and wine program, which includes unique beer options like Epic out of Utah and local brewer Lucid, which is teaming with the Gray House to create custom firkins.
