Bryan Deane Bertsch brews his Deane's-brand kombucha in a St. Paul commercial kitchen, with a little help from his wife and business partner, Davianne, and son, Forest. Bertsch was recently forced to transfer sales of his fermented tea from co-ops to liquor stores after the federal Alcohol and Tobacco Tax and Trade Bureau classified it as an alcoholic beverage.
