Chez Arnaud on Grand Avenue in St. Paul is the latest outpost in a small chain of French bakeries (with other stores in White Bear Lake and Maple Grove). It is both a patisserie, making exquisite French desserts, and a boulangerie, specializing in bread. Those breads include baguettes (on par with Rustica's), brioche, and pain de Lodošve, but also simple, elegant meat-and-cheese sandwiches with ham, prosciutto, and smoked salmon. Arnaud's patisserie emphasizes artful, flawless execution in desserts such as the Perigord (a layered parfait of vanilla cream, chocolate mousse, chocolate cake, and raspberries), macarons, eclairs, Napoleons, tartlets, and, of course, madeleines.
