The owners of Birdhouse, Heidi and Stewart Woodman (of the famed Heidi's in Uptown), are getting locals to think about going out to eat a little differently: How to eat better without sacrificing taste. Birdhouse on Hennepin, open breakfast through dinner, showcases moderately sized, simply prepared dishes that are as healthy, thoughtful, and sustainable as they are surprising, enjoyable, and accessible. A waffle, for example, is made from spelt and quinoa but is topped with either creamed chicken or a fruit compote. Other comfort foods from chef Ben Mauk include barley porridge (better than is sounds), farro salad with roasted lamb, bison short ribs, refreshing fruit and vegetable spritzers, and simple but satisfying desserts like lemon curd with fresh berries.
