Back in March, five of our best chefs converged on the Lowes Hotel to prove their pork prowess in the Minneapolis leg of Cochon 555. Each was given a heritage breed hog to roast, to butcher, to terrine, to confit, to sous vide; hell, he could kiss the goddamn snout if he felt like it. But in the end to cook his porky best, all the while raising awareness around heritage breed pork.

Corner Table and Revival chef/owner/madman Thomas Boemer took the prize of Prince of Porc [sic] and this month, he'll be competing in Aspen for the national title. What's that? You say you wanna go, too? Read on:

On Saturday, June 20, Cochon 555 winners from 10 states, our own Boemer included, will compete.

There will be a full weekend of events, of course including endless food, drink, and pork. If the local event was any indication, this one will be worth dieting for a full week beforehand in order to save room in the old guts.
