The hulking bean and rice burrito with an extra-large dollop of guac has long been the guilty pleasure of choice for vegetarians and vegans on the go.
But now the company with a conscience (Chipotle has long touted its commitment to sustainable, local, and organic animal protein sourcing) is introducing a product specifically designed with meatless eating in mind.
According to Chipotle, the "Sofritas" meatless option consists of organic shredded tofu braised with chipotle chiles, roasted poblano peppers, and a blend of aromatic spices, and will be a permanent menu option at all Minneapolis locations.
And for those who know their tofu nuances down to "firm" and "medium-firm," they've tapped Hodo Soy Company, known for its fresh, hand-crafted artisan tofu. It is organic, non-GMO, and US grown.
Sofritas is also the first new major menu item launch for Chipotle since its inception over 20 years ago.
