Last summer we reported that the Wedge Natural Foods Co-op had initiated a multi-phase plan for expansion beyond its Lyndale location. Phase one would initially involve the creation of a new commissary kitchen to help expand the catering business, and today they've confirmed their original plans and elaborated. In conjunction with the new commissary kitchen, the Wedge will open a brand new market in the same space that will offer "seasonal deli options, grab-and-go sandwiches, artisan bake house breads, pastries, a coffee and juice bar, and a small seating section for dining in," according to the co-op's press release.

The new location will be on the 2400 block of Nicollet Avenue, right in the heart of Eat Street, the long stretch of Nicollet just outside of downtown Minneapolis that plays host to a number of prime eating establishments.

The new Eat Street space will be more than 15,000 square feet and will be the Wedge's second Twin Cities location. The market and the cafe portion of the new location will take up just over 3,000 square feet, leaving the additional space for the bake house and deli production, limited office space, and possibly a community room. The Eat Street location also comes with the luxury of off-street parking.

"We are excited to join this vibrant neighborhood, which has been a Twin Cities dining destination for decades, and offer a unique food option," said Josh Resnik, CEO of the Wedge. "This smaller format store will provide organic, local ingredients and serve as a fill-in grocery shopping spot and a friendly neighborhood hangout."

Construction on the new space will begin this spring, with plans for a grand opening sometime in late 2014.
