The Wedge Co-op seeks expansion

It seems as though co-op expansion is all the rage these days. Hot on the heels of Seward Co-op and Lakewinds Co-op's growth-seeking announcements, south Minneapolis's the Wedge Natural Foods Co-op is following suit. In a release to its members made over the holiday weekend, the Uptown area's natural food store said that it's looking to expand its turf.
The Wedge's expansion plan encompasses a three-part process that they expect will take up to three years to see completion. The initiatives are all member-inspired, and they'll be seeking input along the way through a series of public roundtables. They've also got a dedicated email set up for community suggestions.
The first step in the Wedge's expansion process will involve the creation of a new commissary kitchen that will allow them to expand upon their current catering capabilities. According to the release, "We outgrew our kitchen space a long time ago. By investing in an off-site kitchen, we will be able to meet customer demand for prepared foods and open up more retail floor space at the store."
This leads directly into step two: a remodel of the existing Lyndale location. The Wedge is looking to not only increase ease of access, but also hoping a remodel will help to provide new services such as indoor customer seating, a hot bar, a salad bar, and rotisserie chickens.
Step three is the most ambitious of all: the construction of a brand new location. In the release to members, the Wedge explains: "For many years, members have requested another Wedge store in their neighborhood. We have members driving from far and wide. A second store will serve these members while helping to alleviate some of the congestion at our current store."
No location has currently been decided, but they're looking at where their members are located in an effort to help with the decision. For more information on the expansion, visit the Wedge's site.
