The El Pepino Fresco--another garden-fresh drink recipe
Our search for the perfect summer cocktail continues. El Pepino Fresco translates to fresh cucumber in Spanish--nice, since cukes are so plentiful right now. We especially like the use of tequila in the recipe. It's hard to create balance with the agave-based spirit because it tends to overpower. This creation uses floral notes and the clean flavor of cucumber to find a sweet melody.

2 cucumber slices
1/2 oz. simple syrup
2 oz. tequila
1/2 oz. St. Germain elderflower liqueur
cucumber slice to garnish
Muddle two cucumber pieces with 1/2 oz. simple syrup and 1/2 oz. St. Germain elderflower liqueur, add tequila, shake and strain over rocks. Top with Peychaud bitters and garnish with a cucumber slice.
