The Copper Hen Cakery: Cutesy Kickstarter for scratch-made cakes

Sweet fans are swooning over all the new bakeries popping up this year. Next on deck is the Copper Hen Cakery from a husband and wife duo who are baking scratch-made goodies with farm-fresh ingredients. Their breakfast blueberry and bacon cupcakes aren't the only thing these two have cooking; they also have a Kickstarter campaign well under way.

Danielle and Chris Bjorling hope to open their bakery in South Minneapolis in early 2014. Danielle has over ten years baking and catering experience. She honed her cake decorating skills while working for Lund's and Super Target. Her husband Chris is trained as a certified public accountant.

They have yet to nail down their exact location, but as Chris told us, they are very close to locking something in. "We are about 99 percent sure we will be located somewhere in South Minneapolis, but we have not signed a lease yet," he says.

Their dream is to fill what they see as a lack of local bakeries using exclusively farm-fresh ingredients. They will partner with Larry Schultz to use his organic eggs.

Their Kickstarter video is beyond precious, featuring them collecting eggs, feeding chickens, holding hands as they walk through a field, and throwing bales of hay out on the farm. It's just about sweet overload:

The proposed Copper Hen menu is filled with a more delicious kind of sweet overload: cakes, cupcakes, hand pies, and jams. But before you slip into a diabetic coma, know that there will be some savories, like ham and cheese hand pies, available as well. They'll also be applying for a beer and wine liquor license.

Their Kickstarter campaign has less than two weeks to go with several rewards for backers still available, including free cakes, jams delivered to your door, and simple syrups with flavors like Vanilla Lavender. So far, they're over halfway to their goal.

Says Chris of their vision, "We are bringing farm-to-table desserts to Minneapolis.  Not to burst anyone's bubble, but some bakeries around the cities use pre-made mixes or preservatives in their ingredients.  We pride ourselves on making everything from scratch, using all-natural ingredients, with no additives or preservatives -- the way baking was meant to be."
