April showers bring May flowers, but they also bring their fair share of dreary days and rain-soaked nights, complete with the sweatpants and Bitesquad we thought we'd left behind after the last snow flurry melted. Yes, it's hard to get out of the house with the world so soggy and sad, but with the promise of spring and new beginnings in hand, make a pact to trade those PJ pants for fancy pants, and sample something spanking new and full of life at Heyday.
It's all waiting for you, just beyond that endless curtain of rain: warm woodwork, filigree bulbs shaded in antique seltzer siphons, and best of all, a fresh cocktail list sprouted from the mind of Britt Tracy, formerly of Borough. "It's an idea that I fixated on, and messed with it until it worked," says Tracy, of The Beetnik. The cocktail's base layer, the element that gives it that vibrant reddish pink hue, is a beet and orange shrub, a combination of vinegar, sugar, and fruit of choice.
Add to that a healthy pour of tequila, lime, Cynar, and a drop of absinthe, which Tracy explains lends an interesting tarragon flavor to the drink, and you've got yourself a proper Beetnik. Tart citrus and bold, assertive tequila take center stage at first sip, mellowing out as a bouquet of unique tastes unfold on your tongue: the aforementioned tarragon, sweet, aromatic artichoke liqueur, and of course, beets, all wrapped up in a pretty, ice-chipped hot pink package. It's punchy and unexpected, easy on the eyes and vibrant on the tongue, just what the doctor ordered to bust up your rainy day rut.
