Minnesota's only Filipino restaurant has shut its doors after less than a year in business. Just last winter, owner Jim Hays brought a fresh culinary concept to the Twin Cities by partnering with opening chef Neil Guillen, formerly of New York City's Kuma Inn, to create a menu of Asian-influenced small plates that combined French cooking technique with Filipino flavors.
Was the fare too exotic for its downtown Minneapolis digs, and not drawing enough of the Hilton and Orchestra crowds? Hard to say. But we'll sure miss the pork candy, the Peking cakes, the whole red snapper, and the young coconut juice sipped straight from the shell.
