Rob Barrett Peels: Mango with sticky rice
There are no mango trees in Minnesota. While that hasn't stopped me from trying or from buying bargain palm trees at Home Depot, we Minnesotans love our tropical fruit in our arctic climate. Recently some have asked me to do a video on how to peel these slippery little buggers. After years of skinning walleye, I've figured out a very Minnesotan way of doing it, and am excited to share it with you, along with a recipe for coconut sticky rice.
Mango with coconut sticky rice was the very first Thai dessert I ever had (at the original Royal Orchid), and it remains one of my favorites to make. While this isn't technically sticky rice, it's very close in texture, while much easier to make.
