I'm not a big fan of French cuisine. While I've always loved Julia, I'm a texture guy, and it tends to be a little too fluffy and rich for me most of the time. But I do want to give the French their due when appropriate. They know their eggs, and the omelet is a wonderful, wonderful invention.
If you haven't had a really good omelet, go to the Good Day Cafe on 394. They know things the French only dream about. But if you want to make one at home, try this method and these variations. My favorite is the Ukrainian omelet toward the end. You'll understand why when you see the vid. The good news is the basic omelet I make in the video is only just over 200 calories. That's a great way to start your day, whether you're French or not.
