Riverbend CSA: a weekly share in photos

Now that the weather has cooled I think it's good to show folks what's still popping up in my CSA box. Technically it isn't fall quite yet, and there are still a few lingering summer vegetables showing up week after week, with winter squash just beginning to show it's face.

There are many jokes about people trying to pawn off their zucchini on unsuspecting neighbors at the end of summer, but I can't get enough of them. This yellow variety has microscopic seeds and retains a sweet flavor every way you prepare them, from grilled to sauteed with garlic and butter, with a good coating of freshly grated Parmesan right before eating.

I'm often impressed with the variety of peppers that can be grown in Minnesota. This week we received a standard green bell, Anaheim (long and green), jalapeno, and cherry bomb. I'm thinking a scramble of peppers and eggs is in order for Sunday brunch

Potatoes come in all varieties, but I've been thoroughly enjoying the ones we've been getting in our CSA this year. This Desiree variety will be served tonight, smashed and served with sauteed mustard greens and a salmon fillet.

I love sweet potato fries, and these young, tiny and uncured tubers will make an awesome side to Sunshine Harvest farms hamburgers for an easy weeknight meal.

We split our full share CSA with another family, so this is only half of the haul, which still seems like a lot of vegetables to me for two people. Other delights found in our box (but not photographed) include edamame, fenugreek leaves, more potatoes, and squash.
