Healthy eating coming to the corner of 9th and Hennepin

Marin, the new restaurant in the Le Méridien Chambers hotel in downtown Minneapolis has announced its opening date. Named for Marin County in California, the restaurant will have a menu marrying Northern California cuisine with local Minnesota ingredients. The food will be, above all else, healthy.
Nutritional information including calories, fat, carbohydrates, protein, and fiber will be listed on the menu. The dishes will include several vegan and gluten-free items. The press release teases dinner entrees such as pea and carrot ravioli with mint and pine nuts; a bison strip loin served with heirloom beans and arugula pesto as well as a pork tenderloin with cumin carrots, red quinoa, and sumac yogurt.
They will be serving breakfast, lunch, and dinner daily. Breakfast will include quinoa waffles, baked eggs, and nitrate-free bacon. The kitchen will be run by executive chef Mike Rakun, who also worked with owner Craig Bentdahl at his Mill Valley Kitchen. The menu will change seasonally and utilize responsibly raised ingredients whenever possible.
The restaurant space, which was occupied by Chambers Kitchen and D'Amico Kitchen previously, has been given a complete overhaul. Shea, Inc. was challenged with utilizing natural materials.
Marin will open Sunday, June 23.
