If you love the paella at La Ceiba Bistro, better get there within the next few days to get your fix. The Powderhorn neighborhood restaurant will serve its last dinner on August 15.
Chef/owner Hector Ruiz will be converting the restaurant into an event space and catering kitchen. “Our goal is to provide an innovative event space in this location to meet a growing demand for special venues with catering capabilities for multiple communities and organizations,” he announced on La Ceiba’s Facebook page.
The closing comes on the heels of the opening of Ruiz’s newest addition to his mini-empire, Costa Blanca Bistro, a tapas restaurant in northeast Minneapolis. The prolific chef also owns Rincon 38, Café Ena, and La Fresca, all in south Minneapolis.
Ruiz thanked customers and assured them that they’ll be able to satisfy their cravings for popular La Ceiba dishes – like that paella – at pop-up events he’ll host at Rincon 38 and Costa Blanca.
