One of the best moments from last year's Meritage Oysterfest was when newcomer Holly Carson joined chefs Jack Riebel and Vincent Francoual to show the boys how a lady can get down on the oysters. Carson, the diminutive chef who rules the raw bar at Sea Change, flexed some impressive arm muscles and kicked some ass. While she didn't win the contest, she overwhelmingly won the respect of everyone in attendance.

This Friday Carson, whose langoustine preparation is one of the best bites of food to be had in the city, will be leading a class on raw seafood at Kitchen in the Market.

Attendees will learn while they feast on raw clams, tuna poke, oysters, and scallops. Carson's  delicate use of flavors always allows for the glory of the fresh, sustainable seafood to shine. With her assistance, attendees can learn to re-create her elegant food at home.

The class, which will go from 6:30 to 9:30 at the commercial kitchen space inside Midtown Global Market, costs $100. Tickets can be purchased here.
