With all the fuss and muss of everyday life, from playing the parking game post-work to making sure that yes, you did get that TPS report filed, there's something to be said for simplicity. And there's even more to say about a really good glass of sake.
On those days when everything else seems to require every ounce of effort, take a step into the dimly lit Moto-i in Lyn-Lake, grab a booth, and order yourself a glass (or a carafe) of the Junmai Genshu Name.

What makes Moto-i's eight kinds of sake so spectacular (and the Genshu, in particular) is that all of the sake is brewed on site. From milling and steaming the rice to fermenting with Koji-kin and finally pressing the sake, the brewing extraordinaires at Moto-i clearly take pride in the process. Each of the sakes here is unpasteurized, which means they've got a lot more fragrance and a bit more kick in the taste-department.
Drier than some of the restaurant's other sakes, the Genshu is for seasoned sake lovers who want something less nectar-like than your average sake. This particular brew combines the flavor of green apple and white pepper for a fresh zing and a smooth finish that is only slightly sweet. There's a reason this is one of the most popular sakes at the restaurant.
While the Genshu stands alone very well, what really brings out the bright flavors in this drink is a sampling of Moto-i's phenomenal dishes.

Try the JFC -- that's Japanese Fried Chicken -- that comes piping hot from the kitchen. Or load up on Moto-i's famous steamed buns; the mayo-loaded mushroom bun in particular is a must.

Moto-i's creamy ChaHan bibimbap also pairs well with the Genshu, as the sake amplifies the ginger in the rice and the barbecue flavors in the pork, while cutting through the spiciness of the sauce.
If you're lucky enough to make it for happy hour, which runs Sunday through Thursday from 2:20 p.m. until 6 p.m. and then again from 10 p.m. until 2 a.m., you'll be able to get the Genshu and all sakes at the restaurant for half-off.
