Little known fact: Chef Landon Schoenefeld used to be a delivery driver for Ping's, the long-standing, very pink, Nicollet Avenue Chinese spot where fried rice and cream cheese wontons reign supreme.
Seems those long hours trapped in the Pinto with the waft of grease driving him wild had a lasting effect.
From January 5 through 8, HauteDish will temporarily retire its menu to make room for HauteWok, a Schoenefeld Chinese-inspired menu.
"I always make my interpretation of Chinese food for family meal with what we have left over on the shelves," he says.
For diners, though, he'll do one better. He especially likes the "Foietons," those cream cheese wontons of takeout boxes gone by, with foie gras swapped in for the Philly's.
And just to reassure you that it's not some half-baked experiment, many of these dishes have appeared before, on various tasting menus and as specials.
Even the menu mainstay General Tso's Sweetbreads will be there.
