Gastrotruck finds a permanent home
Gastrotruck will be the next food truck to travel from street to brick-and-mortar shop. We spoke with owners Catherine Eckert and chef Stephan Trojahn about what we can expect to find at the new shop. Like their unique, gourmet offerings, the new restaurant will be forward thinking, and ultra green.

The duo are thrilled to realize their dream, after three years of planning, to open in the same neighborhood they live in, northeast Minneapolis. The space is on University Avenue, right next to Gastof's. They aren't releasing the new name just yet, but it will be different than the truck.
Being green will continue to be a priority for them. They hope to have the project LEED certified and are recycling as much construction waste as possible. The coolest aspect is that they are going to grow a large amount of produce on site. They hope to grow about 50 percent themselves. They're putting in a massive grow wall as well as a green roof and a greenhouse planned for year-round consumption.

In addition to their own green goods, they will continue to partner with their same local, sustainable suppliers like Callister chickens, Fischer Farms pork, Thousand Hills beef, and more. Fans of their complimentary condiments will be able to buy some items on site to take home, such as spice rubs, hot sauce, and dressings.
The cuisine will be modern Midwestern with an obvious seasonal focus. The great news for vegetarians and vegans is that they will expand those offerings. (Gastrotruck is already known for having some of the best veggie burgers in town.) Plus, with all that fresh produce, even more gluten-free items will be available.
Service will be fast-casual style, and the menu prices will be affordable. The idea will be a neighborhood stop for sitting and catching up with friends, or grabbing a quick meal to-go. They will be open for lunch, dinner, and weekend brunch.
Plans include an assortment of local beers with a limited wine program, focused on glass value. We're already imagining soaking in some late afternoon sun while sipping a little wine cocktail with a four-legged friend. The patio will be dog friendly, and they even plan to include some homemade treats for man's best friend.
Those dreams will have to wait a little while, though. Opening is slated for fall. The Gastrotruck team will be out in full force on the streets this summer and already have a busy catering schedule.
