From humble beginnings as a temporary special, the Brussels sprouts at Hola Arepa rose to become a fixture on the regular dinner menu. And with good reason: Whatever you may think about these mini cabbage-like morsels, you haven't truly savored them until you've had them like this.

Roasted until their insides are tender and their outside leaves are crisp, the sprouts are tossed with rounds of spicy house-made chorizo and large flakes of salty Manchego cheese, and set on a bed of a tangy tamarind glaze. Bright pink radish slices and tiny pepitos offer a bit of crunch.
