Minnesotans love burgers, to the chagrin of some of our best chefs, who put an excellent burger on the menu, then watch as diners refuse to order anything else.

So popular are these burgers that chefs must put restrictions on their availability, lest the kitchen be reduced to an assembly line of bread-patty-bread. See Haute Dish's Flavor Country Burger, now only available in the bar; or Victory 44's Perfect Burger, only available at brunch at chef Erick Harcey's new restaurant Upton 43. He was recently quoted in MSP Magazine: “I’m grateful for the Perfect Burger, it’s supported my family,” he says. “But it gets frustrating. It’s the best burger, yeah — but try this dish, it’s also awesome. And they won’t try anything else.”

Those are two of the best burgers. There is also the cheeseburger at Saint Dinette, and the Revival Burger at Revival, and the burger at Parlour; and most recently the Hi Lo Burger at Hi Lo Diner, of which we are extremely fond. Each one has its staunch devotees, and those devotees will get frothy at the mouth defending the honor of "their" burger. 

So naturally, it's our duty to jump on the bandwagon. Chances are you know your burger as soon as you bite, and you won't get overly geeky about what makes it so good. You just know that it is. That's how we feel about the Burger 2.0 at Il Foro. The salty, cheesy, umami pile is a sensory memory we can't seem to shake — not that we'd want to. 

The geeky stuff: Il Foro chef Joe Rolle is the same dude responsible for the venerable Parlour burger. And once he started running a new kitchen, he needed a new burger. Hence, the Burger 2.0. The grind is equal parts brisket, chuck, and short rib. Plus butter. Lots and lots of butter. The ubiquitous squishy white bun gets toasted inside and out with yet more butter, and finally, a specialty American cheese gets applied using an ice cream scoop. If that detail alone doesn't send you right over, what will? 

But take heed: Like many other best burgers, this one is only available at lunch, 11 a.m. to 5 p.m. Monday through Friday.
