Yes, crudo, the Italian take on raw fish, is everywhere these days. But not all crudo is created equal. The fish or shellfish needs to be pristine, handled with care, and embellished enough to enhance but not overpower the star of the show.
The scallop crudo at Scena is a case in point. The glistening scallops are bathed in a cascade of fruity olive oil and paired with playmates that could easily overpower the mild sweetness of the scallops: isot pepper, lardo, and shallots. But somehow the flavors of the smoky, earthy peppers, the richness of the lardo, and the hit of acid from the shallots only serve to bring out the essence of the scallops.
