Today we continue our talk with Dawn Drouillard from Fabulous Catering as she shares her unique views on the world of food. You can read part 1 here.

What is the hardest lesson you've learned as a chef? Many people don't care about quality.

What are your favorite cookbooks? The French Laundry and anything by Cook's Illustrated.

What show would you pitch to the Food Network? The Rock and Roll Cooking Show. It would be a wild and crazy show with guest celebrity rock stars cooking their favorite dishes. While the food was finishing in the oven, the bands would play, and viola! Here is your delicious dinner! We actually filmed a pilot back in the '90s. I'd love to see that tape now!

What has been your weirdest customer request? Where to begin? I've pretty much seen it all. I guess boiled broccoli is pretty weird and alarming.

What is the weirdest thing you've ever eaten? "Island Stew" in Roatan, Honduras. It was prepared by a Jamaican lady, and it featured wild island rabbit, iguana, and conch. I kind of can't get the flavor our of my mouth, and it's been over 10 years!

What is your best culinary tip for a home cook? Eat out.
