Cupcake plans to expand to not one, but two more Twin Cities locations
The world of Twin Cities baked goods is expanding yet again. This time the Minneapolis/St. Paul Business Journal is reporting that Cupcake owner Kevin VanDeraa is set to open not one, but two more locations which would double his current operations. With stores already located on University Avenue in Minneapolis and in the Mall of America, VanDeraa is set to finally launch his much anticipated St. Paul location as well as an additional, full service restaurant location in Eagan.
VanDeraa has been trying to open a St. Paul location for years, but has been met with a barrage of obstacles from the city, although it appears that now he's figured out a way to make it happen.
According to the Business Journal report, the smaller-sized location allows VanDeraa to avoid the parking issues which prevented the opening of his previously proposed St. Paul location. The new spot will be located at the intersection of Selby and Snelling Avenues in the former Two Smart Cookies location, right near the new Whole Foods. Look for doors to open sometime in September.
The Eagan location will be a new kind of venture for VanDeraa as it will mark his entry into the full service dining arena. The 7,000 square-foot location will feature a wood fire oven in which the plan is to make pizzas and various Minnesota style hot dishes. The restaurant will also serve a variety of tap wines and beers.
