Remember when gluten-free bakeries were cropping up like dandelions a couple of years ago? Mpls/St.Paul mag reports that the owner of Cooqi, on Marshall Avenue in St. Paul, has given up the shop to focus on baking mixes. Minneapolis's gluten-free bakery, Madwoman foods on Nicollet, remains open, as does BitterSweet Bakery in Eagan. Cooqi will continue to supply several local pizza joints with crusts, including Luce, Galactic, and Eden Pizza.
