Sushi Avenue's fast-casual concept One Two Three Sushi is rolling out a new outpost, this time in St. Paul. Launching June 2, this will be the fourth opening for the restaurant since 2013, as the St. Paul spot joins two locations in downtown Minneapolis and another in Dinkytown.

Lunch crowds, look out for $6 steamed buns, $7 rice bowls, and $9 bowls of fresh ramen. Best known for their Chipotle-style line of customizable sushi rolls, One Two Three's options will be plentiful at the new spot.
Customers can choose one of 16 main ingredients and build a sushi roll from there, mixing and matching from a sizable list of fillings and toppings. Main ingredients include three raw fish options, vegetarian options like fried tofu, BBQ tofu, and egg, and cooked meat options like green tea smoked chicken, pork tonkatsu, and beef tataki. Load up your roll with fruits, veggies, and cream cheese, and drizzle on sweet miso or screaming Thai sauce. Or keep it simple and watch your calorie intake using this handy tool that generates the nutritional information for each roll. We're calling it now: On-the-go maki will make its mark on the St. Paul Skyway dining scene come June.
