Though the novelty of getting Indian-spiced mini donuts from a big red truck still has not worn off for us, there is a wonderful comfort in knowing that we can now get these perfect little treats just about any time we want. That's right: Chef Shack has gone brick and mortar.

Following the trend of many popular trucks like Potter's Pasties, Foxy Falafel, Smack Shack, and the upcoming restaurant from Gastrotruck that have all set up permanent, year-round shops, Chef Shack's owners Carrie Summer and Lisa Carlson announced yesterday that they are planning to open "an urban truck stop" on 31st and Franklin in the Seward neighborhood.

Last spring there were rumblings that the duo might move into the old Jack's/Java Jack's space on West 46th Street and Bryant Avenue South, but that plan was soon scrapped and they shifted focus to their full service restaurant in Bay City, WI. That 80ish seat place opened for business in the fall of last year and has since enjoyed immense popularity, but for us city-dwellers it's a bit of a haul.

Summer and Carlson are planning to remedy that with their new concept, Chef Shack Ranch, a 40-seat restaurant with lots of options for take-away and for dining in. They're planning to be open Thursday through Saturday with brunch on Sunday and will serve pulled pork, brisket, roast chicken, burgers, hand-cut fries, and biscuits and gravy. They won't forsake their dessert reputation either. Summer says they plan to do fresh pie (hallelujah!), cakes, and their signature mini donuts at the truck stop, too.

Chef Shack Ranch is expected to be open by early winter. Stay tuned for updates.
