The preeminent Twin Cities food truck is moving into its winter weekend digs. The former River Bay Cafe in Bay City, Wisconsin, has been given a facelift and a shine. When can we expect to taste Chef Shack's delights in its new space?
The opening weekend bash will begin on Wednesday October 31, also known as Halloween. The menu will be casual bistro fare featuring "wild-grown, heritage cookery from the valley." Lisa Carlson, owner of the Chef Shack along with partner Carrie Summer, is a Rochester native. The area just outside of Red Wing on the Wisconsin side of Lake Pepin is surrounded by rich agricultural land. The menu will likely highlight area farmers, just as the owners have always done inside their trucks.
The Bay City location will have 40 seats in the dining room, with another 40 available outside on their patio. There will also be a full bar. So dust off that Indian-spiced mini doughnut costume* and head down for what is certain to be a delicious new scenic road trip destination.
*There is no indication that the opening will be any sort of costume party, but it can't hurt to dress up on Halloween, right?
