Jaimie Malone and Erik Anderson finally have a home for their diaphanous cooking, like this "scallop cooked and raw" from one of their pop-ups.

You know you've made it when you have a restaurant before you have a restaurant. For an entire year, people have been saying,: "Erik Anderson and Jamie Malone of Brut," although Brut has, for that entire year, only been a concept. An idea, a dream, a thought bubble.

But such is our confidence in these two chefs — formerly of Sea Change, but then also of nationally recognized Catbird Seat in Nashville (for Anderson), and of Scena consulting fame. They're big time, these two, Food and Wine Best New Chefs big time, and finally, their place is no longer an effervescent notion, but a building! 

Mpls./St. Paul Magazine has confirmed that Brut will land in the old Sapor space on Washington Avenue in the North Loop, with a "French-leaning" menu, about 70 seats, and a kitchen that is somehow well integrated to the dining room.

Look for it in spring of next year.
