Brothers Deli strawberry salad recipe: Perfect for summer
Now that June is finally starting to seem a bit more like summer, you might be feeling like a meal that feels like summer too. Jeff Burstein from the Brothers Deli in downtown Minneapolis shares a recipe for a different kind of salad. Their strawberry chicken salad with creamy poppy seed dressing can be made quickly, and leftover dressing can be kept in the fridge and used on other salads.The best part of this salad? Strawberries are in season and ripe for the picking at your favorite farmers' market or grocery store.
Strawberry Chicken Salad with Creamy Poppy Seed Dressing
Salad for four
4 cups romaine lettuce
24 strawberries, halved
1 cup chicken, sliced (or more if you prefer your salads meaty)
4 Tbsp. walnuts
Toss all the ingredients together in a large bowl.
Dressing 1 cup mayonnaise 1 cup sugar 1/2 cup of half and half 2 1/2 to 3 Tbsp. red wine vinegar to taste (the better the red wine, the better the dressing) 1 1/2 tablespoons poppy seeds
Combine mayo and sugar, mixing until sugar has dissolved. Add half-and-half, red wine vinegar, poppy seeds. Stir together.
While the recipe may seem simple and ordinary, the creamy dressing is what sets it apart. "[Customers] love the dressing," Burstein says, and unlike most poppy seed dressings, "it's not a vinaigrette type, more of a creamy poppy seed."
