That was your entire notion of what cheese could be: shiny, florescent squares of solidified molten plastic, which you happily ate for ignorance of other options. And then one day, someone gives you a taste of Parmigiano Reggiano, a sample of an English Farmhouse Cheddar, and a nibble of a delicately veined Gorgonzola, and your world is forever changed. Such is the experience of eating Broders' fresh, homemade pasta. So long, Creamette. The veil has been lifted.

Available in three widths and three flavors, Broders' Cucina sells the same pasta that it makes fresh daily for use in its pasta bar across the street by the pound at the deli counter. With a consistency of play-dough, it's immediately apparent that this is a different beast than the dry, boxed pasta to which we're all accustomed here in the United States. Fresh pasta should be used within a week of purchase, and stored in the refrigerator until you're ready to eat it. To cook the pasta, bring a pot of well-salted water to a boil, plop the pasta into the pot, and boil just until the pasta bobs to the surface--usually just one or two minutes. Serve immediately.
