Moving in to the North Loop neighborhood
The North Loop dining options continue to expand. There is an intriguing new restaurant and bar taking shape at the foot of the ElseWarehouse building. Borough and Parlour is being run by two up-and-coming chefs and a big-name craft cocktail mixer, who already have our mouths watering.
In the kitchen will be Nick O'Leary and Tyler Shipton, who met while working at Travail. O'Leary has also spent time behind the burners at Saffron (and appeared with Sameh Wadi when he competed on Iron Chef
), while Shipton comes from Bar La Grassa. The two shared with Stephanie March on her Foodie File blog
that the food at Borough will be a collaborative effort, not just between them but with all the cooks on the line.
An early menu features dishes like a sous vide egg wrapped in sausage and bacon and fried Scotch-egg-style; a sweetbread roulade wrapped in caul fat and chicken skin; and a potato soup with champagne and black truffles.
Below the restaurant will be a new craft cocktail joint called Parlour, run by City Pages' Best Bartender winner, Jesse Held
. Held is also the president of the Northstar Bartenders Guild and has tended craft cocktail bars around town such as Eat Street Social and Marvel Bar. Held told us that he's combined elements of all of the hip drink spots where he's worked. "It's below ground, but it's not trying to be Marvel Bar," he told us. "There are windows where people can look right out onto the street. There will be food, too." And the drinks? They will be more of the ingenious boozey flavors we've come to expect from Held.
