As a countdown to the Best of the Twin Cities 2013, coming April 17, the Hot Dish is serving up 50 of our favorite local dishes.

Ever since Stewart and Heidi Woodman's Birdhouse opened in the former Duplex space on Hennepin, healthy eating no longer just feels like fueling up. The couple's mission to create a restaurant with wholesome (often meat-free and sometimes dairy-free) options available at all hours of the day has most definitely been accomplished with its menu of fresh-pressed juice cocktails and spritzers; springy, savory spelt waffles; and some pretty incredible braised short ribs.

It's thoughtful, sustainable fare that's still totally accessible and delicious. One dish embodies all those adjectives perfectly: the simple sweet pea pate.

This light, clean, and richly textured spread makes a perfect start to any meal, and though it's velvety smooth, it's very low in fat. The bottom layer is a vibrant green blend of sweet peas and fresh mint topped with a layer of subtly sharp goat cheese, cracked pepper, and a scattering of pale lavender chive blossoms. Served with seeded crusty bread, each bite has pure clean flavor and luxurious texture.
