We are the best! Well, we have the best chef in the Midwest anyway, according to the James Beard Foundation. They bestowed Paul Berglund of the Bachelor Farmer with the honor in a Chicago ceremony last night.
The Bachelor Farmer and Berglund are known for a progressive take on Midwestern cooking. Textbook perfect popovers with honey butter, wild rice with pancetta and sage, and sunchokes fried in pork fat with watercress pesto are the kinds of dishes that are one part your grandma's farm and one part tall French toque.
Three other Minnesota chefs have received the title, including Tim McKee of the former La Belle Vie in 2009, Alex Roberts of Restaurant Alma in 2010, and Isaac Becker of 112 Eatery in 2011.
