Lazy Lightning perused the Eagan City Council's upcoming agenda and noted that a new restaurant is set to replace the former Bibo restaurant run by the Marchionda family, owners of Buon Giorno and I Nonni in Lilydale.

Lightning notes that the business Andiamo Italian Ristorante, located at 1629 Lena Ct. in Eagan, was filed with the Secretary of State by a Ramon Ruiz, and wonders if it might be the former executive chef at St. Paul's Buca di Beppo.

The bigger question is, can a third Italian restaurant succeed where two others have failed (the spot was Viva Italia before it was Bebo)?

When I reviewed Bibo I thought it offered a nice addition to Eagan's American-food-heavy, chain-eatery-saturated dining scene: a more inexpensive, casual version of I Nonni's scratch-made, authentic Italian cooking. There were tasty pizzas, pasta carbonara, mozzarella in carrozza (the Italian version of mozzarella sticks) and a delicate lasagnette. The space was nice, wine list was good, and service was serviceable....and yet.
