Sometimes all we want is one perfect sweet bite. Nothing outlandish, no gargantuan sundaes or mile-high cakes, just a little treat to tide us over. For an elegant dose of sugar, Mademoiselle Miel's honey bon-bon is just the thing.

It's the LBD of the local chocolate scene -- pure honey, plain and simple, all dressed up on the outside as a petite dark chocolate truffle adorned with 23-karat edible gold leaf. The effect is surprising. The first mouthful is all honey, smooth and wholesomely sweet, but then the bitter flavors of the chocolate kick in, leaving a tingly tannic aftertaste. What upon first bite seems simple becomes quite sophisticated once your bon-bon is gone.

We love that Mademoiselle Miel is both a chocolatier and a beekeeper. The honey comes from their very own bees, kept on the rooftop of a downtown St. Paul condo building. It's lovely to imagine the flight path of these bees, zooming along the Mississippi river valley, cruising through Mears Park, and arriving back at the hive before dusk.
