As the season slowly changes, a whole new spate of restaurants and food trucks is coming to make springtime that much more delicious. Sushi burritos, BBQ on wheels, coffee on tap, and more: 


Moroccan Flavors

Moroccan Flavors is now open in the Midtown Global Market, serving salads, couscous, and tagines with North African ingredients and spices. Watch for things like kofta (heavily spiced ground beef) sandwiches, braised chicken tagines with preserved lemons and olives, and turmeric rice with stewed tomatoes. Like most MGM establishments, the setup is fast casual, and prices are very affordable with all offerings falling under $10.

Trapeze from Kim Bartmann 

Kim Bartmann, the woman behind what is possibly the largest restaurant empire in the cities (Bryant-Lake Bowl, Barbette, Pat's Tap, Tiny Diner, Third Bird, Red Stag, Bread and Pickle) is opening yet another restaurant. It seems like champagne has been trending (see the champagne-centric St. Genevieve, and the upcoming, long-anticipated Brut), and Bartmann is getting in on the action. According to Eater, the space will be adjacent to Barbette, seat only 40, and "be dedicated to pouring all things sparkling and serving all the foods that go with them." Think fancy toasts and small bites like "French tapas."

Bibuta Food Truck from Sushi Fix 

When Sota Roll opened recently in Edina, we initially thought the notion of sushi burritos was a little snicker-worthy. Then we tried it, and hey, it works! Sushi Fix, probably the pinnacle of sushi-dom around here, is getting in on the concept.

Chef/owner Billy Tserenbat says he wants people to "understand Japanese street food." Bibuta (beautiful pork in Japanese) will serve sushi burritos, with choices of raw fish, pork, and veggies, as well as "creative bowls." Sushi Fix got their start on a heralded food truck, but ultimately, Tserenbat says sushi was just too time- and labor-intensive to serve in that format.

Sushi burritos will allow them to serve greater numbers at greater speeds. Watch for them starting May 10 in downtown, as well as every Saturday at Minnesota United soccer games.

Cornerstone Cafe 

Chef Wendy Puckett and Eddie Hutchins have opened a new soul food cafe in the former Sunnyside Deli and Coffee in north Minneapolis. No details on menu specifics yet, but catering is available seven days a week. Now open.

Market BBQ Food Truck 

Market BBQ has been slinging smoked meats from the same Nicollet Ave location since 1946 and now they're finally taking their show on the road. Watch for the BBQ food truck, which debuted on Friday, at Fulton Brewery, and around downtown now and throughout summer.

Costa Blanca 
In more prolific restaurateur news, Hector Ruiz (of La Ceiba, Rincon 38, Cafe Ena, and La Fresca) has applied for a liquor license, this time in Northeast. The chef known for his Mexican and Caribbean cooking has traditionally stayed on the south side of Minneapolis.

No word yet on specific cuisine, but Costa Blanca refers to Mediterranean coastline in the Alicante province of Spain. Perhaps the chef is going back to his roots: the Spanish-influenced El Meson, which closed in 2012. No word on specific opening date.

Blackeye Roasting Co. 
Taprooms are all the rage, so why not put other beverages, like coffee, on tap? Blackeye roasting company will be doing just that this spring in the Minneapolis skyway. Ten tap lines of non-alcoholic beverages will include cold brew coffee, nitro iced tea, kombucha, and draft cocktails.

In addition, the café will offer traditional batch coffee and a full line of espresso-based beverages.
