Crispy grilled salmon skin is fatty, flavorful, and crunchy, almost like the bacon of the sea. To keep the skin from cracking into a mess of stabby shards, they leave a bit of salmon on so the meat, fat, and skin all cook together. It comes swaddled with slightly tart burdock root, peppery radish sprouts, and juicy cucumber, making this somewhat akin to a sushi version of a BLT.
You can only get the salmon skin maki at the Origami Uptown location, but it's just $6.50 at happy hour, so it's worth the trek. Plus if you sit at the sushi bar, your rolls come out lightning fast, and you get a complimentary plate of pocky and orange slices for dessert.
