Downtown Minneapolis's 112 Eatery is a small, classy restaurant and a great date spot to impress a beau. Owned by Isaac Becker, winner of the James Beard award for Best Chef Midwest, 112 has a menu chock full of incredible cuisine.
Most of the time, when we eat at the 112 Eatery, we are so stuffed full of gnocchi and decadent cheeseburgers that the thought of dessert seems... gluttonous. We're already prepared to roll home (like Violet in Willy Wonka and the Chocolate Factory), and wouldn't dessert gild the lily?
Luckily for us, we have a second stomach just for sweets -- like cows, but we tend to smell a bit better. There are plenty of mouth-watering options on the dessert menu, including apple crisps and homemade waffles, but you will never go wrong ordering Nancy Silverton's butterscotch budino.
Nancy Silverton is a California chef, author of a variety of cookbooks, and champion of artisan breads and sourdough. With such an ardor for carbohydrates, Silverton is already a winner in our book, and the fact that she is behind the recipe for the butterscotch budino speaks volumes to her culinary brilliance.
The dessert arrives in an unassuming manner.
"Why, it's just pudding in a jar!" you think, blasphemously.
But then you tentatively pick up your spoon, watching closely as it delves into a creamy, thick, sweet oasis of butterscotch and salted caramel.
Just as the spoon touches your lips, you realize that this is no pudding. This, this is ecstasy. With every velvety spoonful of the deep flavors of the caramel, the tang of the sea salt, and the overall sweetness and light from the butterscotch, you fall deeper in love with this dessert.
Finally, the sound of the utensil hitting the empty jar awakens you from your dream. Shaking your head, feeling foggy and slightly disoriented, you can't seem to remember a time before you met this dessert. It's that good.
The butterscotch budino is typically always available, and will run you $9. That price sounds steep, but $9 for a cup of euphoria is a steal.
