As a countdown to the Best of the Twin Cities 2014, coming April 16, the Hot Dish is serving up 100 of our favorite local dishes.
The French fries are double fried for extra crispy exteriors, though the potato inside stays plush. Where poutine so often goes wrong is in the gravy -- it soaks the fries until they're soggy and robs the whole dish of this wonderful texture.
