The secret to a successful soup dumpling is to add a little club soda to the dry ingredients and let the carbonation react with the baking powder, creating some extra lightness in the dough. That's sort of the idea with these pancakes. A tablespoon or two of regular Coke goes into each pancake and the acid and carbonation in the pop immediately goes to work on the baking power and baking soda.
