As a countdown to the Best of the Twin Cities 2014, coming April 16, the Hot Dish is serving up 100 of our favorite local dishes.
Fish and chips is a humble dish from across the pond, but the locals who love it appreciate its perfect simplicity and are devoted to their favorite renditions around town. At the Hot Dish, we love a classic order from Mac's
, appreciate the newsprint-wrapped authenticity served at Merlin's Rest
, and of course cannot resist the fish and chips from the Anchor
, but this year a new entrant gave all three of these venerable spots a run for their money.
's secret to success is that they fry their lightly-battered haddock and hand-cut fries in beef tallow, which is basically just rendered beef fat. It sounds much fancier when you don't explain it, but trust us, it's what makes the difference between a decent plate of fried things and a truly memorable dish.
Ward 6 serves up this dish with a little sea salt and malt vinegar. A combo of malty vinegar and mayo makes a purist's dipping sauce: no tartar sauce and no ketchup required. You will need some extra napkins, but you will not need a to-go box.
