100 Favorite Dishes: No. 42, Saffron's Heart Beets

As a countdown to the Best of the Twin Cities 2014, coming April 16, the Hot Dish is serving up 100 of our favorite local dishes.

Dining inside Saffron is always a full-on sensory experience, from the perfume of the myriad spices in the kitchen to the tranquil lighting to the layers upon layers of fantastic flavors in each dish. However, no visit is complete without one of Saffron's cocktails. Barman Robb Jones, who was once a chef himself, builds the flavors inside a bar glass the same way Wadi builds his dishes in the kitchen. Heart Beets, his frothy pink stunner, is one we fell for hard and fast -- a glass of beautiful love.

Jones first crafts beet essence from the ruby root vegetables, creating a light and lovely beet juice. He mixes that with Gordon's dry gin, lemon, Pierre Ferrand cognac, dry orange curacao and absinthe. It's given a vigorous shake and served with a darling little heart drawn on the foam in bitters.  The result is an intoxicating mix of tart, fresh, and light flavors with that intriguing earthy beet note. It's a perfect drink for lovers and those looking for love.
