Here's a dish that will really get the Easter Bunny hopping. This adorable taste of spring is the kind of stunning display of complex flavors, astounding technique, and whimsy we've come to expect when dining inside Doug Flicker's Piccolo.

[jump] It's hard to name another chef in this town who has consistently pushed the envelope in the style of Chef Flicker. From his late, great Auriga to the cozy south Minneapolis neighborhood bistro he now runs, Flicker inspires his contemporaries and serves dishes that have cultivated a hungry following of neighborhood regulars. At Piccolo, a simple scrambled egg becomes a legendary dish in the Minneapolis culinary landscape.

This winter, while we were fighting the polar vortices, Chef Flicker was serving carrots that tasted like a promise of spring. In a carved, shallow wooden bowl he places these snappy root vegetables as though they were freshly plucked from the garden, in a bed of edible "dirt." The pairing of sweet gold and orange carrots with an earthy Stilton enhances the carrots' natural, almost honey-like flavor.
