100 Favorite Dishes: D'Amico Kitchen's Chicory Salad

A friend once told me that I taught him to love salads, and later I realized why: I don't really like to put vegetables on them. I realize it seems counter-intuitive, but stick with me. After a youth spent thinking iceberg + mealy pink tomatoes + rock-hard carrot coins + gloopy dressing = salad, I found that I was more satisfied when greens were topped with meats, cheeses, nuts, fruit, olives, etc. Take, for example, the lovely chicory salad at D'Amico Kitchen. The bitter bite of chicory and frisee is softened by its sweet-salty combo of prosciutto strips, fresh figs, and buffalo mozzarella. Lace it all together with a viscous balsamic vinegar syrup, and you, too, will likely convert to keeping your salads light on the veggies.
