When you see registered dietician Tamara Brown’s hot pink food truck rolling down Kellogg Street in St. Paul, you can look forward to filling fare like braised beef with mashed cauliflower, bacon chive deviled eggs, wild rice salad with spinach and black cherries, or pulled pork served with a ginger-garlic coleslaw. All of it is healthy, locally-sourced, organic, and--the only truck currently on the road who can boast this toast--completely gluten-free. Sassy Spoon just started a year ago but has already gained a following thanks to its mission of healthy alternatives, high in the good kinds of fats, low in sugar, and tasty as all get out.
